I would like to know if there is any company that tracks "who buys what" in terms of age, ethnicity, income levels etc. Specifically, information that would let me infer what kind of person looks for what kind of products (particularly gifts)

One company is Claritas they have developed a database they call Prizm which has a lot of demographic info with consumer behaviour.
